Homemade Double Blueberry Muffins


Who doesn’t love a blueberry muffin? No one, that’s who. Now double the blueberries, make it at home, and you have the most delicious blueberry muffin you have every tasted. I saw the recipe for Food Network’s Double Blueberry Muffins and just had to try them for myself.









These muffins were extremely easy to make and even easier to eat, so why not try them yourself?

What you’ll need:

8 tablespoons (1 stick) unsalted butter, softened at room temperature

1 cup plus 2 tablespoons sugar

2 eggs

1 teaspoon pure vanilla extract

2 teaspoons baking powder

1/4 teaspoon salt

2 1/2 cups fresh or thawed frozen blueberries

 2 cups flour

1/2 cup milk

1/4 teaspoon cinnamon

Putting it all together:

Preheat oven to 375 degrees F

Grease muffin tin or line with baking cups

Using either a mixer with a paddle attachment or a hand mixer, cream the butter until smooth

Add 1 cup of sugar and mix

Add the eggs, vanilla, baking powder, and salt, and mix

In a shallow bowl, mash 3/4 cup blueberries with back of fork, add to the batter and mix

With the mixer running at a low speed, add 1/2 cup flour, then 1/2 cup milk, mix

Repeat with remaining flower and milk

Fold in the remaining 1 3/4 cup blueberries with hand until well mixed

In a separate bowl, mix 2 tablespoon sugar and cinnamon

Use an ice cream scoop or large spoon to fill baking cups 3/4 full

Sprinkle cinnamon sugar mixture on top of muffins

Bake until golden brown and risen, 25 to 30 minutes
